Double Stacked Carne Asada Quesadilla

This is one of those recipes you wanna keep making to impress your friends or family. Stacked high with all the goodies1

Length of time from start to finish: 50 min 
Difficulty:  Easy 
Ingredients: 
  • 2 lbs skirt steak 
Green Salsa:
  • 4 tomatillos 
  • 1 tbsp chopped cilantro 
  • 1/4 sweet onion 
  • 2 Fresno peppers (sub jalapeño peppers)
  • Salt to taste 
  • 3 12 inch flour tortillas 
  • 3/4 cup cheese 
Garnish:
  • Cilantro 
  • Red onion

Instructions:

Start off by preheating the grill to 350 degrees and season the meat with your favorite seasoning, then, place aside.

-Now, let’s roast all ingredients for the salsa. Place onion, tomatillos, and Fresno peppers on the grill, remove once they are nicely charred and tender. Add to a blender along with the cilantro and blend until smooth. Once you pour it in a bowl, add salt to taste.

-Now let’s cook the meat. Sear the meat 4 min per side. Remove the meat and let rest for 5 min.

-Now cut the meat against the grain and lay down the tortillas on the grill. Turn it to low heat and add 1/4 cup of cheese per tortilla and let melt.

-Once melted, let’s assemble. The tortilla goes down, next the meat, add cilantro and red onion to garnish, now the salsa. Then add the second tortilla with the cheese facing up, now more meat, cilantro and red onion, and finally cover with the last tortilla cheese facing down.

-Cut like a pizza and enjoy. 

Make plenty as it’s so delicious. You can use any other cut of meat.
