These are one of the best sandwiches you will ever have, if you have any left over pulled pork, you can always place a few lbs aside from a previous cook as well. Definitely need to try if you haven’t. The most important thing is the bread, the only thing I found close to it was telera which is a soft bread roll from my local Mexican market.

Ingredients:
- 2 lbs thin sliced beef ribs
- Juice of 1 lime
- 3 Tsp your favorite carne asada seasoning
- 16 corn tortillas
- 2 onions
Salsa ingredients:
- 2 roma tomatoes
- 3 tomatillos
- 5 garlic cloves
- 1 Fresno pepper (sub jalapeño pepper)
- 1 jalapeño pepper
- 1/4 sweet onion
- 1/4 bunch cilantro
Garnish:
- Cilantro
- Onion
- Lime juice

Instructions:
-Let’s start off by making the marinade for the beef ribs. In a bowl combine the juice of 1 lime and 3 tsp your favorite carne asada seasoning.
-Now place the beef ribs in a ziplock bag and pour in the marinade. Make sure they are nicely coated. Now, place them in the refrigerator and leave them in there for about 2 hours but preferably overnight.
-When they have been in there 1 hour 45 min let’s heat up the grill.
-Preheat the grill to 450 degrees. While that’s happening, wrap 2 whole onions in foil. Before that remove the outer layer and cut down on the onion through the center 2 times but not all the way through. Add a little cooking oil and salt.
-Wrap very tightly and place those onions on the grill.
-Grab your ingredients for the salsa and rinse them under cool running water. Now place them on the grill until nicely charred and tender ( except the cilantro).
-In a blender add all the ingredients for the salsa plus the cilantro and blend until smooth, add salt as needed, and set aside. Now check on your onions. You want to remove those once they are tender. When they hit that tenderness remove and set aside.
-Now let’s grill the beef ribs. Grill them for about 3.5 min per side on high heat, then remove and let cool before cutting the bones out and chopping them with a cleaver.
-Now unwrap the onions and press down, they should literally dissolve. Now heat up the tortillas and assemble. Add the grilled onions, then a pile of beef rib, now the salsa and top off with cilantro, onions and a squeeze of lime juice.
