Carne Asada Loaded Baked Potatoes

If you love baked potatoes and carne asada, then this recipe is for you! The cheese, the salsa and that marinaded skirt steak just works so well.

Carne Asada Loaded Baked Potatoes

Ingredients
  

  • 2 lbs skirt steak 
  • 4 oz queso manchego 
  • 2 large russet potatoes 

Marinade

  • 2 tsp garlic paste
  • Juice of 2 limes 
  • 1/2 bunch chopped cilantro 
  • 1/4 sweet onion thinly sliced 
  • 2 tbsp Worcestershire sauce 
  • 2 tbsp soy sauce 
  • 2 tbsp chipotle sauce 
  • 8 oz beer (your favorite)

Salsa 

  • 1 roma tomato 
  • 2 jalapeño peppers 
  • Juice of 1 lime 
  • 2 tbsp cilantro 
  • 1/4 sweet onion
  • 3 garlic cloves 
  • Salt and pepper to taste 

Instructions
 

  • Start off by marinading the meat in a bowl. Add all the ingredients plus the meat and let it marinade for 30 minutes minimum or preferably overnight.
  • Season the meat first with salt and your favorite non salted seasoning.
  • Next, let’s preheat the grill to 400 degrees. Start off by roasting the ingredients for the salsa ( except the cilantro and lime) once charred and tender, add to a blender and blend until smooth, adjust salt and pepper to taste.
  • Now par boil the potatoes for 10 minutes or until a toothpick goes in like butter. Wash the potatoes by scrubbing it, no soap just cool running water.
  • Once they are boiled, take out and pat dry. Be careful as they are extremely hot.
  • Next, sear up the meat about 4 min per side or if you like it all the way cooked, do 7 min per side.
  • Once you flip the meat, lay the potatoes on the grill to keep warm, and help crisp up the skin just a bit. (due turn the potatoes once or twice so it won’t burn the skin too much)
  • Once the meat comes off the grill and it’s resting, slice the tops of the potatoes, and carve them out. Add to a bowl along with grated cheese, and mix until the cheese is fully melted, now set aside and slice up the meat.
  • Once you cube it, assemble! Add the cheesy mashed potatoes back to the potato skins, load up with carne asada, cilantro, onion, salsa and finally crema. 

Notes

You can use any type of cheese you like and add serrano pepper to the salsa. If you want a nice heat to it.
