Carne Asada Sopes

These sopes are so delicious! They are like tacos but the tortilla is thicker and deep-fried to a perfect crisp.

Difficulty: Easy
Ingredients:
  • 1.5 lbs chopped beef for tacos
  • 12 sopes ( You can get these at your local Mexican store)
  • 1/2 can refried beans
 Green salsa
  • 16 small tomatillos
  • 4 garlic cloves
  • 3 serranos
  • 1/4 sweet onion
  • 2 tbsp cilantro
  • 1/4 cup water
  • Salt and pepper to taste

-Let’s start off by frying the sopes for about 1 minute. I used my deep fryer for this. You can do it in a skillet.

-Just add enough oil to cover the bottom, fry them until nicely browned.

-Then let’s slice up the cabbage as thin as you can, same with the sweet onion and chop the cilantro.

-Now, preheat your griddle on medium-high heat, add the ingredients for the salsa right on the griddle amd remove them once everything is nicely charred and tender. Add the ingredients to the blender along with fresh cilantro and water. Blend until smooth. Then add salt and pepper to taste. Now season up the meat! Use your favorite carne asada seasoning, I recommend the Spanglish asadero all-purpose.

-Now cook the meat until it’s nicely browned. While the meat is cooking heat up the beans, now it’s time to assemble, add refried beans to the sopes, then the Asada, cabbage, white onion and cilantro, topped with queso fresco and crema Mexicana.
