Chicken Chili Verde Sausage Tacos

Chicken Chili Verde Sausage Tacos

Ingredients
  

  • 1 pack chicken chili verde sausages 
  • 2 large poblano peppers 
  • 8 oz queso manchego 
  • 4 medium flour tortillas 

Garnish

  • Pickled onions 
  • Fresh Guacamole

Instructions
 

  • Preheat the grill to 350 degrees
  • Cut the tops off the poblano peppers. Remove all the seeds, now cut the queso manchego into strips and stuff the peppers with it.
  • Grill the peppers on all sides until nicely charred. Remove them and chop the peppers with the cheese.
  • Now open up the pack of sausages and grill them about 2 min per side. Once those are charred, remove and split them open. You wanna butterfly them. Don’t cut them into 2 pieces, just to open them up.
  • Now in a skillet, place the sausages about 2 min per side, then remove them and add the cheese and poblano peppers chopped. Once the cheese has fully melted add it to the warm flour tortilla, followed by the sausages, pickled onions and top off with fresh guacamole salsa. 

Notes

You can use queso Oaxaca as a substitute. You can use corn tortillas if you wish. The fresh guacamole salsa is very easy to make, just throw all these ingredients (2 avocados, 3 tomatillos, 2 tbsp cilantro, juice of 1 lemon, 1 jalapeño pepper, 1 serrano pepper, 2 garlic cloves, 1/4 sweet onion, salt and pepper to taste) in a blender and blend until smooth. Makes sure to remove the husks from the tomatillos, the seeds from the avocados.
