These are very simple to do! All it just takes is a bit of time to get them nice and tender. Simple ingredients sometimes are better.
Length of time from start to finish: 1.5 hours

Ingredients:
- 2 slabs of spare ribs
- Mustard as a binder (optional)
- Salt and pepper
- 1/2 Bbq sauce to slather
Instructions:
-Preheat your smoker to 275 degrees. I threw in applewood chunks for that Smokey, sweet flavor. Prep your ribs by removing the membrane, add mustard as a binder, season with salt and pepper.
-Place ribs on the smoker and don’t peek, this is the hardest part. Let them go for 3 hours then check them. Close the grill back and check after another 1 1.5 hours.
-Check to see if the ribs are tender by picking them up with your tongs on one side, if the meat cracks in the middle they are ready for the bbq sauce.
-Slather them with the Bbq sauce and leave them on the smoker for an additional 10 min to get the sauce nice and tacky.
-Then remove and let rest in a cooler for 30 min, I wrapped them in foil with a towel before placing them in the cooler.
Resting in the cooler allows all the juices to redistribute back into the ribs. The cooler kept them nice and hot the whole time. You can always use oil as a binder or hot sauce.
