These are a must-try! The sauce just makes it work, hot with sweet.

Ingredients:
- 6 boneless skinless chicken thighs
- 6 slices cheddar cheese
- 6 brioche buns
- 6 slices of American cheese
- 1/2 cup mayo
Wet batter:
- 1 cup cornstarch , 1/4 cup reserved for coating
- 1/2 cup flour
- 1 tablespoon paprika
- 1 1/2 tablespoon onion powder
- 1 3/4 teaspoon coarse salt
- 1/2 teaspoon black pepper
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1.5 cups  water
Nashville hot Sauce spices:
- 1/4 cup cayenne pepper
- Â 2 tablespoons brown sugar
- Â 1 tablespoon garlic powder
- 1 tablespoon paprika
- 1 teaspoon red pepper flakes
- Â 1/2 cup the oil you are using to fry with.
Instructions:
-Start off by salting the chicken and then mix the wet batter. In a bowl mix all dry ingredients, then add 1 1.5 cups of water, stir until smooth. You want the batter not too watery not to dry a nice runny consistency.
-Then add your chicken to the batter, and leave it in there. Preheat your oil to 350 degrees, once it’s preheated you want to fry the chicken 2 times. This will give you the crispiest chicken you will ever have. The first fry will cook the chicken thoroughly then the second will give it that amazing crispiness.
-Fry it for 7 min, then remove and refry again for 3 more min. If you have a lot of chicken to fry, and you fry it in batches, the first chicken you remove, fry that one first on the second fry. Add your spice mix to a metal bowl. Then add 1/2 cup of the oil you are currently using to fry, add it to the spice mix, be very careful as it’s extremely hot. Mix it until the spices are well incorporated with the oil, this will be your hot sauce.
-Once all your chicken is fried, baste the hot sauce, do not toss it as it will break that nice crispy crust you worked so hard to create. At this point, once the chicken is all sauced, add the cheese to it. The heat from the chicken will be hot enough to melt the cheese.
-When the chicken is resting, toast the buns with either mayo or butter. Then it’s time to assemble, add more mayo to the buns, then the chicken and the pickles. Then it’s time to enjoy. It’s optional to add cheese, you can also add lettuce or tomatoes. Serve along with fries. Before placing the chicken in the oil, move the chicken slowly along the top of the oil before dropping it in, this way the outside of the chicken is partly hard and won’t stick to each other or the bottom of the frying pan.
