This is one of those recipes you have to try! Especially if you love onions. The onions are really sweet and provide a ton of juice to the burger itself.

Ingredients:
- 1/2 lb 85/15 ground beef
- 5 slices cheddar cheese
- 1 1/2 Fresno pepper (sub jalapeño pepper)
- 2 large sweet onions
- 2 slices of bacon
- 2 brioche hamburger buns
- 2 tbsp mayo

Instructions:
Preheat your smoker to 275 degrees.
-Now, let’s prep the onions! Be very careful with this step! Grab a paring knife and cut around the top of the onion and carve out the center. Now that the onion you carved out, mince it and add it to a bowl.
-Also, mince the Fresno pepper and 3 slices of cheddar cheese. Add 1/2 lb of ground beef and mix! add liberally your favorite hamburger seasoning and combine everything thoroughly.
-Stuff the onions really well and wrap the onion with bacon! Use a toothpick to hold the bacon in place.
-Now place in the smoker until the onion looks tender. While the onion is finishing up, toast the brioche buns, now let’s assemble, add mayo to the buns and then the stuffed onion. Wait 3 min before serving.
