If you like sausages, then this recipe is for you. Super simple ingredients and yet really delicious.
Sausage Tacos and Loaded Sausage Hotdogs

Ingredients
- 2 pack Zatarains Cajun style sausages
- 2 hoagie rolls
- 4 oz Oaxaca cheese
- 2 tortillas
Mango habanero Pico de gallo
- 1 mango (seeded and diced) skin removed
- 2 habanero peppers
- 2 tbsp cilantro
- Juice of 1 lime
- 1/4 red onion
- 1 Roma tomato
Sautéed Onions
- 1 large sweet onion
- 2 tbsp cooking oil
- Salt and pepper to taste
Instructions
- Let’s start off by dicing up the ingredients for the mango habanero pico de gallo and add into a bowl. Add lime juice and salt and pepper to taste.
- Let’s slice up the sweet onion and set aside. Now let’s preheat the grill to medium heat. Once preheated, add a pan, and sauté the onions, now add salt and pepper, remove those once they are nice and tender.
- Set aside the sausages lay them on the grill and give them a nice char. I like to do 2 zones of heat on the grill. I like to place the coals to one side and leave the other side without the coals. Once the sausages are charred place them over the side with no coals, let those keep warming.
- I like to pull those off at 145 internal temperature. Now while those are preheating, let’s smash up the avocados for the guacamole and set aside ( make sure to remove the seed and the avocado skin)
- Once the sausages are off the grill, heat up the tortillas, and load up the buns with the sausages. Once the buns are loaded with the sausages, add Oaxaca cheese and place those back on the grill to melt, place them opposite of the heat.
- Once the cheese is melted, load them up with sautéed onions and chipotle mayo. Now add a tbsp of guacamole, the sliced sausages and top off with the pico de gallo.
Notes
I like to use a instant read meat thermometer to check the internal temperature of the meat.
