Say no more turkey fans! These smoked and fried turkey wings are sure to impress the crowd. They’re packed with just the right amount of smoke flavor and crispness.

Instructions:

-Preheat your smoker to 275 degrees.

-Now, separate the drum from the flats by cutting where the joints meet on the wing. This is right in the middle.

-Cut the tip off the wing right off. Now let’s add oil as a binder, and season them with smokin buffalo blend (you can use your favorite poultry seasoning).

-Now, place them in the smoker and let them go until 155 internal temperature. Have your oil preheated to 350 degrees around this time.

-Flash fry the wings for about 2-3 min. Your final internal temperature should be 175 degrees at the thickest part of the wing. Once they are all fried, toss in wing sauce and let cool for 3 min before serving.

You can choose to leave the wings in one piece, I find it separating them makes them a lot easier to cook.
