Smoked Tomato Soup

Warm and delicious tomato soup just hits the spot at this time. When it’s cold outside it calls for comfort food.

Difficulty: Easy
Ingredients:
  • 4 Large tomatoes
  • 1 medium sweet onion
  • 1 head of garlic
  • 6 sweet peppers
  • 1 Boursin shallot and chives pack
  • 2 cups chicken broth
  • 3/4 cup heavy cream

 Instructions:

-Preheat your smoker to 320 degrees.

-Now let’s cut up all the veggies. Slice the tomatoes, quarter the onions, slice the sweet peppers in half and remove the seeds, cut the top of the garlic cloves.

-Season the veggies with salt and place them in the smoker. Smoke your veggies for 45 min or until tender.

-After this is done, transfer all veggies to a pot and add 2 cups of chicken broth, cover and let simmer for 20 min on low heat. After 20 minutes, add the pack of Boursin.

-After the cheese pack is incorporated add the heavy cream and let simmer for 10 additional minutes. Once cool add salt and pepper to taste.

I made a grilled cheese sandwich to dip into the tomato soup. You can also do this in your oven at the same temperature as the smoker.
