Surf N Turf Burritos

This is one of those recipes you definitely wanna try. Especially if you like surf and turf. 

Length of time from start to finish: 1:55 min 
Difficulty: easy 
Ingredients: 
  • 2 lbs flap meat 
  • 4 8 oz lobster tails 
  • 1 cup shredded cheese 
  • 4 burrito tortillas 
  • 1 can of refried beans 
Marinade:
  • 5 garlic cloves 
  • 1 bunch cilantro 
  • 2 tbsp soy sauce 
  • 2 tbsp Worcestershire sauce 
  • Juice of 1 lime 
  • 1 tbsp paprika 
  • 1/4 cup olive oil 
Salsa:
  • 1/4 sweet onion 
  • 4 tomatillos 
  • 2 jalapeño peppers 
  • 2 garlic cloves 
  • 1/4 bunch cilantro 
  • Salt to taste

Instructions:

-Start off by making the marinade! In a blender throw in, olive oil, garlic cloves, cilantro, lime juice, soy sauce, Worcestershire sauce, and paprika, blend until smooth. Marinade the flap meat at least 2 hours.

-While the meat is marinading and 30 min are remaining, let’s preheat the grill to 350 degrees and cut the lobster tails in half with a sharp knife, just be very careful.

-Season the lobster tails with your favorite seasoning. Set those aside.

-Now let’s roast all the ingredients for the salsa, place the ingredients for the salsa on the grill and remove  once they are nicely charred and tender.

-Then add to a blender and blend until smooth, now add it to a bowl and add the cilantro and salt to taste.

-Let’s grill the steak. Sear the steak 3.5 min per side for a nice medium-medium rare finish. If you like it more cooked then do about 5 min per side. While you turn the steak add the lobster tails, leave them meat side down for 3 min. Once you remove the steak let it rest and turn the tails, leave them for an additional minute.

-Now let the lobster tails cool before removing them from the shell, slice them into pieces, now slice the steak.

-Let’s assemble, in the burrito tortilla, add beans, meat, lobster, cheese, salsa and roll nice and tight. I placed a small griddle on the grill and proceeded to toast the tortilla until it was nicely browned. 

You can use flank steak or thin sliced chuck roast as well.
