BBQ Chicken Sliders with Hawaiian Rolls and Herb Butter

Ingredients
  

BBQ Chicken:
  • - 3 boneless skinless chicken breasts
  • - 2 tablespoons your favorite poultry seasoning
  • - 1 cup BBQ sauce divided
  • - 2 tablespoons olive oil
Sliders:
  • - 1 package 12-count King's Hawaiian rolls
  • - 12 slices Colby Jack cheese
  • - 3 green onions sliced
Herb Butter:
  • - ½ stick 4 tablespoons butter, melted
  • - 2 teaspoons fresh parsley chopped
  • - 1 clove garlic minced (optional)
  • - Pinch of salt

Method
 

  1. Preheat oven to 375°F; pound chicken to ¾-inch thickness; season both sides
  2. Heat oil in oven-safe skillet; cook chicken 4-5 minutes per side; brush with BBQ sauce
  3. Bake chicken 8-12 minutes until 165°F internal temp; rest 5 minutes; shred
  4. Mix shredded chicken with remaining BBQ sauce; cut Hawaiian rolls horizontally
  5. Layer chicken, cheese, and green onions on bottom roll half in baking dish
  6. Mix herb butter ingredients; brush over roll tops; cover with foil
  7. Bake 12-15 minutes covered, then 3-5 minutes uncovered until golden; rest and slice

Notes

- Pound chicken evenly for consistent cooking
- Don't oversauce the chicken to prevent soggy sliders
- Keep rolls connected during assembly for easier handling
- Internal temp of chicken must reach 165°F for food safety
