Method
- Start off by preheating your grill to 300 degrees
- Season up the chicken thighs with salt, pepper, garlic and your favorite poultry seasoning.
- Now place those in the grill until they reach an internal of 175 degrees
- While they are cooking, let’s slice up the lettuce and tomato.
- Once the chicken is done cooking, let it rest for 3 minutes before shredding it.
- Once shredded add the wing sauce to it and combine thoroughly.
- Now set aside and in a skillet over med low heat, warm up the pita bread slightly on both sides. Remove from heat, load up with chicken and cheese, fold the pita and place back on the skillet. Crisp up about 2-3 minutes per side
- Once you do, make sure the cheese is melted. Then remove from heat, garnish with the lettuce, tomato and sour cream.
Notes
You can use boneless skinless chicken breast as a replacement. Add mozzarella cheese to it if you can’t find the chihuahua melting cheese. I used franks red hot wings sauce.
