Cajun Honey Grilled Lobster Tails with Garlic Herb Butter Sauce

- 2 (8-ounce) fresh lobster tails - 2 tablespoons Cajun seasoning, divided - 1 stick (½ cup) unsalted butter - 4 tablespoons honey - 1 tablespoon Cajun seasoning (for sauce) - 3 garlic cloves, minced - 2 teaspoons fresh parsley, finely chopped - 1 tablespoon olive oil (for grill preparation)

Ingredients
  

  • - 2 8-ounce fresh lobster tails
  • - 2 tablespoons Cajun seasoning divided
  • - 1 stick ½ cup unsalted butter
  • - 4 tablespoons honey
  • - 1 tablespoon Cajun seasoning for sauce
  • - 3 garlic cloves minced
  • - 2 teaspoons fresh parsley finely chopped
  • - 1 tablespoon olive oil for grill preparation

Method
 

  1. Butterfly lobster tails by cutting through top shell lengthwise; pat dry and season with 1 tbsp Cajun seasoning
  2. Melt butter in saucepan; whisk in honey, remaining Cajun seasoning, and minced garlic
  3. Preheat grill to 400-450°F and oil grates well
  4. Grill lobster tails meat-side down for 3-4 minutes to sear
  5. Flip and brush with honey butter sauce; move to indirect heat
  6. Continue grilling 6-8 minutes, basting every 2-3 minutes until internal temp reaches 140°F
  7. Rest 2-3 minutes, garnish with parsley, and serve with remaining sauce

Notes

- Internal temperature should reach 140°F for perfectly cooked lobster
- Keep honey butter sauce warm throughout cooking
- Don't overcook as lobster becomes tough and rubbery
- Can substitute Old Bay seasoning for Cajun seasoning if preferred
