Method
- Butterfly lobster tails by cutting through top shell lengthwise; pat dry and season with 1 tbsp Cajun seasoning
- Melt butter in saucepan; whisk in honey, remaining Cajun seasoning, and minced garlic
- Preheat grill to 400-450°F and oil grates well
- Grill lobster tails meat-side down for 3-4 minutes to sear
- Flip and brush with honey butter sauce; move to indirect heat
- Continue grilling 6-8 minutes, basting every 2-3 minutes until internal temp reaches 140°F
- Rest 2-3 minutes, garnish with parsley, and serve with remaining sauce
Notes
- Internal temperature should reach 140°F for perfectly cooked lobster
- Keep honey butter sauce warm throughout cooking
- Don't overcook as lobster becomes tough and rubbery
- Can substitute Old Bay seasoning for Cajun seasoning if preferred
