- Make chipotle mayo by blending mayonnaise, chipotle peppers, adobo sauce, garlic, lime juice, and paprika until smooth. Refrigerate until needed.
- Heat griddle to medium-high heat with oil. Cook carne asada 8-10 minutes, breaking up into bite-sized pieces until browned.
- Cook diced onions and jalapeƱos on same griddle surface 5-7 minutes until onions are translucent. Combine with meat.
- Spread chipotle mayo on half of each tortilla. Add meat mixture and cheese, then fold in half and seal edges.
- Cook quesadillas on griddle over medium heat 3-4 minutes per side until golden brown and cheese melts.
- Rest 1-2 minutes, then cut into wedges and serve with remaining chipotle mayo.

Can substitute half sour cream for tangier mayo
