Carne Asada Quesadillas with Chipotle Mayo

Crispy griddle quesadillas filled with seasoned carne asada and served with smoky chipotle mayo

Ingredients
  

  • 2.5 lbs chopped chuck roast
  • 1 medium sweet onion diced
  • 2 jalapeƱo peppers diced
  • 8 large flour tortillas
  • 3 cups shredded Mexican cheese blend
  • 2 tablespoons vegetable oil
  • 1 cup mayonnaise
  • 1-2 chipotle peppers in adobo sauce
  • 1 tablespoon adobo sauce
  • 1 clove garlic minced
  • 1 tablespoon fresh lime juice
  • 1 teaspoon smoked paprika optional
  • Salt to taste

Method
 

  1. Make chipotle mayo by blending mayonnaise, chipotle peppers, adobo sauce, garlic, lime juice, and paprika until smooth. Refrigerate until needed.
  2. Heat griddle to medium-high heat with oil. Cook carne asada 8-10 minutes, breaking up into bite-sized pieces until browned.
  3. Cook diced onions and jalapeƱos on same griddle surface 5-7 minutes until onions are translucent. Combine with meat.
  4. Spread chipotle mayo on half of each tortilla. Add meat mixture and cheese, then fold in half and seal edges.
  5. Cook quesadillas on griddle over medium heat 3-4 minutes per side until golden brown and cheese melts.
  6. Rest 1-2 minutes, then cut into wedges and serve with remaining chipotle mayo.

Notes

Can substitute half sour cream for tangier mayo
Adjust chipotle peppers for desired heat level
Keep filling warm for best cheese melting
Don't overfill quesadillas to prevent spillage
