Cheese-Crusted New York Strip Steaks with Herb Parmesan Topping

Ingredients
  

Steaks:
  • - 2 1 lb New York strip steaks
  • - 1 teaspoon salt
  • - ½ teaspoon black pepper
  • - 1 teaspoon garlic powder
  • - 2 tablespoons olive oil
Cheese Crust:
  • - 1 cup mayonnaise
  • - 2 tablespoons whole grain Dijon mustard
  • - 1 teaspoon fresh thyme chopped
  • - 1 teaspoon fresh rosemary chopped
  • - 1 teaspoon fresh parsley chopped
  • - 1 cup grated Parmesan cheese

Method
 

  1. Bring steaks to room temperature 30-45 minutes; pat dry; season with salt, pepper, garlic powder
  2. Mix mayo, Dijon mustard, herbs, and Parmesan cheese in bowl until combined
  3. Preheat grill to 400-450°F; clean and oil grates well
  4. Sear steaks 3-4 minutes per side over high heat for proper crust
  5. Move to medium heat; spread cheese mixture on top; cook 2-3 minutes
  6. Flip carefully with spatula; add remaining cheese mixture; cook 2-3 minutes until golden
  7. Check internal temp (130-135°F for medium-rare); rest 5-10 minutes before serving

Notes

- Use room temperature steaks for even cooking
- Fresh herbs are essential for best flavor
- Don't press steaks while cooking to retain juices
- Cheese crust should be golden brown, not burnt
