- Cook seasoned chicken thighs in oil until browned and cooked through. Remove from pan.
- Cook sliced peppers and onions in same pan until tender and lightly caramelized.
- Return chicken to pan and toss with vegetables. Let cool slightly.
- Make guacamole by mashing avocados and mixing with diced vegetables, lime juice, and seasonings.
- Assemble quesadillas with cheese, chicken mixture, and more cheese. Fold tortillas in half.
- Cook quesadillas on medium heat for 2-3 minutes per side until golden and cheese melts.
- Let rest 1-2 minutes, then cut into wedges and serve with guacamole.
Notes
Don't overcook vegetables - they should retain some bite. Use ripe but firm avocados for best guacamole texture. Cook quesadillas on medium heat to prevent burning.
