Ingredients
  

  • 1 large Italian bread loaf
  • 2 large chicken breasts
  • 1 cup flour
  • 2 eggs beaten
  • 2 cups Italian breadcrumbs
  • 1 cup marinara sauce
  • 8 oz mozzarella cheese sliced
  • 1/2 cup Parmesan cheese
  • 2 cups vegetable oil for frying
  • Fresh parsley for garnish

Method
 

  1. Pound chicken to 1/2-inch thickness, season, and bread with flour, egg, and breadcrumbs.
  2. Fry chicken in vegetable oil until golden and cooked through, about 4-5 minutes per side.
  3. Hollow out bread loaf, brush with melted butter.
  4. Layer marinara, mozzarella, fried chicken, more sauce, and cheeses in bread boat.
  5. Garnish with parsley and serve immediately with extra marinara.
