Double Smoked Honey Mustard Ham

Ingredients
  

  • 8 lb whole ham 
  • 1 tbsp mustard 

Seasoning

  • Sweet preacher 

Honey Mustard Glaze

  • ½ cup of honey
  • 2 tbsp Dijon mustard 
  • 1 tsp sweet preacher seasoning 
  • 3 tbsp butter 

Instructions
 

  • Start off by preheating your smoker to 325 degrees, ( I recommend apple wood for smoke flavor)
  • Then, prep the ham. You want to score the ham with a sharp knife, just slicing in slightly into the meat, do this horizontally and then vertically, this will give the ham a nice presentation and will crisp up those bits
  • Now you want to slather the ham all over with mustard, just a thin layer, (the mustard is used as a binder, to help the seasoning stick to the meat. you can also use any cooking oil) and season liberally with sweet preacher.
  • Once seasoned, place the ham in a foil pan, and place it in the smoker, you want to smoke the ham until it reaches an internal temperature of 145 degrees on the thickest part.
  • While the ham is smoking, add the honey mustard ingredients to a sauce pan, on medium heat keep whisking for 5 minutes, then turn off the heat (you want to do this once the ham has reached an internal temperature of 130 degrees).
  • Now, baste the ham with the honey mustard glaze, do this one other time, when the ham reaches an internal temperature of 140 degrees. Do remove the ham at 145 internal temperature.
  • Let rest for 20 minutes before slicing it. 

Notes

I highly recommend a meat thermometer for this cook. Do save the drippings to serve along with the ham. The hams are already cooked, most of them are if they are cured, you will just reheat them.
