- Soak guajillo chiles in hot water for 20-30 minutes until soft.
- Blend soaked chiles with mayo, citrus juices, garlic, shallot, soy sauce, and mustard until smooth.
- Pat shrimp dry and season with salt and pepper.
- Heat olive oil on plancha or large pan over medium-high heat.
- Sear shrimp 2-3 minutes per side, adding minced garlic in the last minute.
- Brush hot shrimp with guajillo glaze and serve with cilantro and lime wedges.
Notes
Don't overcook the shrimp - they should be just opaque. The guajillo glaze can be made hours ahead and improves as it sits.
