Garlic Guajillo Shrimp Recipe

Ingredients
  

  • 2 lbs large shrimp peeled and deveined
  • 4 garlic cloves minced
  • 5 guajillo chiles stems removed
  • 2 tbsp mayonnaise
  • 1/4 cup lime juice
  • 1/4 cup orange juice
  • 3 garlic cloves for sauce
  • 1 shallot quartered
  • 2 tbsp soy sauce
  • 1 tbsp Dijon mustard
  • 2 tbsp olive oil
  • Fresh cilantro and lime wedges for serving

Method
 

  1. Soak guajillo chiles in hot water for 20-30 minutes until soft.
  2. Blend soaked chiles with mayo, citrus juices, garlic, shallot, soy sauce, and mustard until smooth.
  3. Pat shrimp dry and season with salt and pepper.
  4. Heat olive oil on plancha or large pan over medium-high heat.
  5. Sear shrimp 2-3 minutes per side, adding minced garlic in the last minute.
  6. Brush hot shrimp with guajillo glaze and serve with cilantro and lime wedges.

Notes

Don't overcook the shrimp - they should be just opaque. The guajillo glaze can be made hours ahead and improves as it sits.
