Grilled Gochujang Chicken Wings

Ingredients
  

Wings
  • 2 lbs chicken wings split into drumettes and flats
  • Your favorite wing seasoning salt, pepper, garlic powder, paprika
Gochujang Sauce
  • 3 tbsp gochujang Korean chili paste
  • 2 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 1 tsp sesame oil
  • 2-3 garlic cloves minced
  • 1 tsp fresh ginger grated
  • 1 tsp chili flakes optional
For Serving
  • Ranch or blue cheese dressing
  • Carrots
  • Celery

Equipment

  • Grill (charcoal or gas)

Method
 

  1. Pat wings completely dry with paper towels. Season generously with your favorite wing seasoning on all sides.
  2. Preheat grill to 300-350°F for direct cooking. Clean and oil the grates well.
  3. Place wings on the grill and cook for 40-45 minutes, flipping every 10-12 minutes, until skin is crispy and charred and internal temperature reaches 185°F.
  4. While wings grill, combine gochujang, honey, soy sauce, rice vinegar, brown sugar, sesame oil, garlic, ginger, and chili flakes in a small saucepan. Simmer for 5 minutes over medium heat until slightly thickened.
  5. Remove wings from grill and toss immediately in the warm gochujang sauce until fully coated. Serve hot with ranch or blue cheese, carrots, and celery.

Notes

Push to 185°F: Wings are dark meat with lots of connective tissue. Cooking to 185°F instead of 165°F breaks down that tissue and makes the meat tender and juicy.
Control the heat: Gochujang brands vary in spice level. Start with 2 tbsp if you're sensitive to heat, then increase to taste.
Alternative methods: Oven at 425°F for 45-50 minutes or air fryer at 400°F for 20-25 minutes.
