Method
- Make honey chipotle sauce by combining all sauce ingredients. Reserve ½ cup for basting.
- Season chicken thighs with salt, pepper, and garlic powder. Marinate in sauce 30 minutes to 4 hours.
- GRILL METHOD: Set up indirect heat (350-375°F). Cook skin-up 20-25 minutes, then direct heat 5-8 minutes, basting frequently.
- OVEN METHOD: Preheat to 425°F. Place on wire rack over baking sheet. Bake 25-30 minutes, baste, continue 5-10 minutes.
- Cook until internal temperature reaches 165°F. Baste with reserved sauce during final minutes.
- Rest 5-10 minutes before serving. Garnish with fresh herbs.
