Honey Jalapeño Smoked Back Ribs

Ingredients
  

  • 2 racks of pork back ribs
  • 2 cloves of garlic, minced
  • 2 tbsp honey
  • 1 tsp salt
  • 1 tsp black pepper

Honey Jalapeño BBQ Sauce

  • 1/2 cup ketchup
  • 2 tbsp mustard
  • 2 tbsp apple cider vinegar
  • 1/2 cup brown sugar
  • 1/2 cup honey
  • 1 tbsp pickled diced jalapeños
  • 2 tbsp Worcestershire sauce
  • 1 tbsp smoked paprika
  • Salt and pepper to taste

Instructions
 

  • Begin by preparing the ribs. Remove the membrane from the back of the ribs, this will help the seasoning and smoke to penetrate the meat. In a small bowl, mix together minced garlic, honey, salt, and pepper. Rub the mixture all over the pork ribs, making sure to coat both sides.
  • Preheat your smoker to 275 degrees. Once the smoker reaches the desired temperature, place the ribs in the smoker. Smoke the ribs for about 2 hours or until the internal temperature reaches 195 degrees. You can check the temperature by using a meat thermometer, inserted into the thickest part of the meat.
  • While the ribs are smoking, make the Honey Jalapeño BBQ Sauce by mixing together ketchup, mustard, apple cider vinegar, brown sugar, honey, pickled diced jalapeños, Worcestershire sauce, smoked paprika, salt, and pepper in a saucepan. Bring the mixture to a simmer over medium heat and stir until the sugar has dissolved. Keep the sauce warm, you will use it later.
  • Once the ribs have reached 195 degrees, remove them from the smoker and let them rest for a few minutes. This will allow the juices to redistribute and make the meat even more tender. While the ribs are resting, brush them with the Honey Jalapeño BBQ Sauce. Make sure to coat both sides of the ribs with the sauce.
  • Place the ribs back in the smoker for an additional 10 minutes, this will allow the sauce to adhere to the ribs and infuse them with extra flavor. Keep an eye on them, making sure the sauce doesn't burn.
  • Remove the ribs from the smoker and let them rest for a few minutes before slicing and serving. Enjoy your delicious Honey Garlic Pork Back Ribs with Honey Jalapeño BBQ Sauce! Serve the remaining sauce on the side for dipping.
  • You can adjust the cooking time and temperature to suit your preferences and the size of the racks. Some people prefer a more tender meat and others like it more crispy. The internal temperature of 195 degrees is a good starting point, but you can go higher if you prefer.
