Korean Inspired Beef Jerky

Ingredients
  

  • 4lb eye of round, fat removed 
Marinade
  • 6 tbsp gochujang Sauce 
  • ½ cup brown sugar
  • 2 tsp garlic powder 
  • ½ cup soy sauce 
  • ¼ cup Sesame oil 
  • 2 tsp onion powder 
  • 2 tsp sesame seeds 

Method
 

  1. Start off by taking off the fat from the eye of round. Once that’s done, place it in the freezer for 30 minutes before slicing it.
  2. While it’s in the freezer, make the marinade. In a bowl, add all ingredients for the marinade, except the sesame seeds. Once it’s all combined set aside.
  3. Remove the eye of round and cut it in half. This will make it more manageable. Once in half, slice it about 1/4 inch slices. I used my meat slicer to slice it thin. You want to slice it against the grain.
  4. Once sliced, place in a bowl and add the marinade and marinade for 30 minutes.
  5. Now preheat your smoker to 165 degrees. Place the meat in the smoker and top off with the sesame seeds.
  6. Dehydrate for 7 hours or until the meat just cracks and there is no sign of moisture. 

Notes

You can use London broil as well for jerky. Any lean cut of meat will do great.
