Ingredients

  • 2-3 lbs chicken wings split into flats and drumettes
  • 3 tbsp lemon pepper seasoning
  • 1 tbsp olive oil
  • 8 oz unsalted butter
  • 1 tbsp lemon pepper seasoning for sauce
  • 1 tbsp fresh parsley chopped
  • Salt to taste

Method

  1. Pat wings dry and toss with olive oil and lemon pepper seasoning. Let sit 30 minutes at room temperature.
  2. Set up grill for two-zone cooking with indirect heat at 325-350°F and direct heat much hotter.
  3. Cook wings on indirect side for 12-15 minutes skin-down, flip and cook 10-12 minutes more.
  4. Make butter sauce by melting butter and stirring in lemon pepper seasoning and parsley.
  5. Move wings to direct heat for 2-4 minutes per side until crispy and internal temp reaches 165°F.
  6. Toss hot wings in butter sauce and serve immediately while skin is still crackling.

Notes

Don't skip the resting time after seasoning - it helps flavors penetrate and promotes even cooking. Wings are done when skin is golden and crispy and internal temperature reaches 165°F.
