Method
- Butterfly lobster tails by cutting through top shell and lifting meat onto shell surface.
- Brush tails with olive oil and season with lemon pepper blend, salt, and garlic powder.
- Prepare compound butter by mixing softened butter with herbs, garlic, lemon juice, and seasonings.
- Preheat grill to medium-high heat (400°F) and oil the grates.
- Grill tails meat-side down for 2-3 minutes, then flip and cook 4-6 minutes more, basting with butter.
- Remove when internal temperature reaches 140°F. Rest 2-3 minutes and serve with lemon wedges.
