Ingredients
  

  • - 1 package 2-3 lbs frozen thick-cut fries
  • - 2 lbs ground beef
  • - 1 packet taco seasoning
  • - ¼ cup water
  • - 2 cups shredded Mexican cheese blend
  • - 2 large Roma tomatoes diced
  • - 2 jalapeño peppers minced
  • - ¼ cup sweet onion diced
  • - 2 tablespoons fresh cilantro chopped
  • - Juice of 2 limes
  • - ½ teaspoon kosher salt
  • - ¼ teaspoon black pepper
  • - Optional: sour cream guacamole, pickled jalapeños

Method
 

  1. Bake frozen fries at 425°F according to package directions plus 3-5 minutes for extra crispiness.
  2. Make pico de gallo by combining diced tomatoes, jalapeños, onion, cilantro, lime juice, salt, and pepper. Let rest 15-30 minutes.
  3. Brown ground beef completely, drain fat, add taco seasoning and water. Simmer until absorbed.
  4. Layer hot fries with seasoned beef and shredded cheese. Return to oven 2-3 minutes to melt cheese.
  5. Top with fresh pico de gallo and optional toppings like sour cream or guacamole.
  6. Serve immediately while hot and crispy with lime wedges and hot sauce on the side.
