Let’s start off by prepping the veggies first. Remove the outer skin of the onion, now thinly slice it, and set it in a bowl.
Now the jalapeño! Remove the stem, slice it in half, and dice with the vein and seeds. Then, set aside. In a separate bowl add 1lb ground beef, add your favorite seasoning and combine really well, now make 4 equal size meatballs, about 4 oz each.
Now, preheat the loco griddle at 325 degrees and add 1 tbsp cooking oil and 1 tbsp butter. Add your onions and season them with salt and pepper. Once they are nice and translucent, set the burner on low heat.
On a separate section of the griddle, set it to sear mode. Then, set the meatballs on that side and use 2 spatulas to smash the Pattys. You want to flip the Pattys once the top of them are looking a bit watery. Flip them and sear for an additional minute, (do flip the onions occasionally so they won’t burn).

Now set the patty melts on the griddle at 350 degrees along with butter. Flip them every 2 minutes until the bread has become nice and golden brown.
Let cool for 3 minutes before serving.
