- Let’s start off by prepping the veggies first. Remove the outer skin of the onion, now thinly slice it, and set it in a bowl.
- Now the jalapeño! Remove the stem, slice it in half, and dice with the vein and seeds. Then, set aside. In a separate bowl add 1lb ground beef, add your favorite seasoning and combine really well, now make 4 equal size meatballs, about 4 oz each.
- Now, preheat the loco griddle at 325 degrees and add 1 tbsp cooking oil and 1 tbsp butter. Add your onions and season them with salt and pepper. Once they are nice and translucent, set the burner on low heat.
- On a separate section of the griddle, set it to sear mode. Then, set the meatballs on that side and use 2 spatulas to smash the Pattys. You want to flip the Pattys once the top of them are looking a bit watery. Flip them and sear for an additional minute, (do flip the onions occasionally so they won’t burn).

- Now set the patty melts on the griddle at 350 degrees along with butter. Flip them every 2 minutes until the bread has become nice and golden brown.
- Let cool for 3 minutes before serving.
Notes
You can use any sliced cheese of your choice.
