Ingredients
  

  • 1 8lb pork shoulder
  • Salt and pepper, to taste
  • Pickles, sliced
  • 2 cups BBQ sauce
  • 1 large sweet onion, sliced

  • Preheat smoker to 275 degrees Fahrenheit. This will ensure that the heat is consistent throughout the smoking process and that the pork will cook evenly.
  • Cut the pork shoulder into 6 large cubes. This will make it easier to fit in the smoker and ensure that the pork is exposed to smoke from all sides.
  • Season the pork cubes with salt and pepper. The salt will help to bring out the flavor of the pork and the pepper will add a nice spicy kick to the sandwich.
  • Place the pork cubes in the smoker and smoke until the internal temperature reaches 175 degrees Fahrenheit. This will take several hours, depending on the size of the cubes. A meat thermometer can be used to check the temperature.
  • Once the pork cubes have reached 175 degrees, place them in a foil pan. Cover the pan with foil and return it to the smoker for 2 additional hours. This step is important as it allows the pork to become incredibly tender and juicy.
  • Remove the pork cubes from the smoker and let them rest for 30 minutes. This will allow the juices to settle and make the pork even more flavorful.
  • Shred the pork using a fork. This will make it easier to eat and ensure that the BBQ sauce is evenly distributed.
  • Toast the rolls. This will add a nice crispy texture to the sandwich and make it more enjoyable to eat.
  • Assemble the sandwiches by placing the shredded pork on the toasted roll, topping with BBQ sauce, pickles and onions. The BBQ sauce will add a nice smoky flavor to the sandwich, the pickles will add a nice crunch and the onions will add a nice sweetness.
