Butterfly lobster tails by cutting through top shell and pulling meat up to rest on shell. Season with poultry seasoning, salt, and pepper.
Preheat smoker to 250°F with mild wood chips like apple or cherry.
Smoke lobster tails meat-side up for 20-25 minutes until internal temperature reaches 140°F.
Make bourbon butter sauce: melt butter, sauté garlic, add bourbon, brown sugar, paprika, and cayenne. Simmer 2-3 minutes.
Remove from heat, stir in lemon juice and salt. Taste and adjust seasoning.
Rest lobster 3-5 minutes, brush with bourbon butter sauce, garnish with parsley and lemon.
