Ingredients
  

Pork Belly Lollipops:
  • - 2 lbs pork belly cut into thick strips
  • - Your favorite BBQ seasoning
  • - Wooden skewers soaked in water
  • - 6 strips bacon cooked and crumbled
Braising Mixture:
  • - 1 cup brown sugar
  • - 1 cup BBQ sauce
  • - 1 stick ½ cup unsalted butter

Method
 

  1. Cut pork belly into 2x3 inch strips; thread onto soaked skewers
  2. Season generously with BBQ seasoning; let rest 15-20 minutes
  3. Preheat smoker to 225-250°F with wood chips
  4. Smoke lollipops 2-2.5 hours until internal temp reaches 160°F
  5. Prepare braising mixture with brown sugar, BBQ sauce, and butter in aluminum pan
  6. Transfer smoked lollipops to braising pan; cover tightly with foil
  7. Continue cooking covered 45 minutes-1 hour until tender and glazed
  8. Add crumbled bacon bits; rest 5-10 minutes before serving

- Soak skewers 30 minutes to prevent burning
- Maintain consistent smoker temperature for best results
- Internal temperature should reach 190-200°F for optimal tenderness
- Bacon bits should be crispy before adding to maintain texture
