Prep the Jalapeños
Cut each jalapeño in half lengthwise and remove the stems completely. Scrape out all the seeds and white veins using a spoon or your fingers. Getting all the seeds out reduces the heat level and creates more room for filling. The veins hold most of the capsaicin, so removing them makes these poppers more approachable for people who don’t handle extreme heat well.
Make the Cream Cheese Filling
Combine the softened cream cheese, sweet BBQ rub, and brown sugar in a bowl. Mix until the ingredients are fully incorporated and the mixture is smooth with no lumps. Smoke the Poppers
